Pairing WH-1000XM2 via Bluetooth dongle plugged into KDL-40HX803

Is there a way to connect my WH-1000XM2 headphones wirelessly to my KDL-40HX803 TV? 

The TV itself does not support Bluetooth, but I could get a Bluetooth dongle which plugs into the mini headphone jack on the TV, but I'd bet that I'd run into lip-synch problems. 

Short of upgrading my TV, what are my options?

As you've already mentioned your KDL-40HX803  TV doesn't support the needed Bluetooth profile to connect and use wireless Bluetooth headphones with it. I wouldn't recommend using a Bluetooth dongle as its operation is not guaranteed and I don't think Sony will be able to provide support for that.

If you're looking to buy a new TV and you'll be using Bluetooth headphones with it then I suggest taking a look at this link from Sony's website where it mentions that TVs and headphones that are compatible with each other for such function.

Ah, there is an additional complication; the TV sound goes via an SA-WA5 sound system.

Well, if it helps, I'm thinking of upgrading to a KD55AF8BU, and if that
can pair with my headphones, and the KDL-40HX803 would be
difficult/impossible to pair, then that would make the decision easier.
