After upgrading my phone to iOS 12 I’m unable to connect the headphones. Tried “forget device”, resetting network settings on phone etc. but nothing works. The phone simply does not see discover the headphones. Any solution?

deleting the headphones on the phones side doesn't help.
You need to bring the headphones back into pairing mode which works like explained here: https://helpguide.sony.net/mdr/wh1000xm3/v1/en/contents/TP0001703115.html
