I just looked under the camera settings (auto) and I noticed it was set on 17 mpx default and the distortion correction was turned off. My question is: Should I take it to 12 mpx and turn on the distortion correction? Or should I let the settings be? I just want the best camera quality and sadly the pics look kind of soft. Natural colors but not as sharp nor as much detail as my S8.

Change it to 3:2 and you'll get larger use of sensor and you can add the image correction, it won't affect the output size or quality in my experience
Is there a specific picture that you want to shoot with specific features?
Mainly it depends on what do you want to picture, when and where? all of these has to be determined to be able to set certain settings for the camera before you take the picture.
