I bought my Experia E5 & received it last Sat afternoon. It is the first new phone I have had in 7 x years, so I am just getting used to it - I have been concerned at the amount of Google things I had to agree to before setting up the phone, I seem to have had tons of updates/ downloads come through. When I was looking to find out how to switch off the wi fi notifications, I went through settings, and was horrified to see that my memory on the phone is now 57% used up in seven days, this seems crazy when I have not taken any photos, videos or downloaded any music - havent even transferred my contacts over yet.

As both @uliwooly and @NeoBeum mentioned, when you update all the applications in your phone and install system updates the free space on the internal storage will be used.
If you aren't using all the preinstalled applications in your phone you can free up some memory by uninstalling updates for these apps. They will then be reset back to the factory version which is smaller in size and if you want to use them later on you can update them again.
Have a look in Settings > Apps and see if you are using all the applications in here, if you don't simply tap on one of them and the 3 dots in the top right corner > uninstall updates.
If you have the setting that will automatically update your apps turned on in the Google Play store settings you can either turn this setting off, you will then have to open up the Google Play store application > 3 lines in the top right corner > Settings > Auto-update apps > Do not auto-update apps.
If you wish to keep this option turned on and that your apps should be updated automatically over Wi-Fi or mobile data you can search for the app that you uninstalled updates for in the search field at the top of the Google Play store, tap on it and tap the 3 dots in the top right corner > unmark the checkbox next to "Auto-update". Now all other applications will be updated automatically.
If you have an SD card in your phone you can use that to store your music, videos and photos. The phone supports SD cards up to 200 GB in size.
