Will updating the firmware on RDR-HXD 790 recorder erase all my recordings on the HDD?

Absolutely not, the only part that you may lose (especially since you need to do a reset of the machine to avoid problems later in digital tuning) are the timer you set and any option you setup in the machine different from the factory ones (i.e. output signal on HDMI).
Whatever is on the HDD remain there unless you format it, and there is no need to do it.

Hi,
I don't think so, the firmware is stored to EEPROM
similar to your PC BIOS , it is not overwrite the HD content
